Quinoa is one of the few plant-based single sources of all nine essential amino acids, so it’s a great addition to a plant-based diet. With the gut-healing sweet potato and other veggies, topped with our Rajas Dressing, it’s also to-live-for delicious!

The Rajas Dressing is really special because it is thicker than other garlic-tahini dressings out there, due to us adding more nutritional yeast (boosting the B vitamins!) and not watering it down.

Just boil the seasoned quinoa, roast your veggies in the marinade, and pour the Rajas dressing on top!
